Holiday Recipes! Meet Beth!


Meet Beth! She wanted to share her favorite holiday recipe for all of you to try. Her dish: Pumpkin Chocolate Chip Cookies! I am running out today to get the ingredients for these cookies because they sound delicious! Now is the time to start baking, for the holiday parties, school events for the little ones, and planning for the feasts that are going to come. I am very excited about cooking this year, and have been thrilled to try all of the new recipes that everyone has been sending to us.


Beth is a work from home mother with an amazing husband, TJ, and two beautiful children, Karoline and Anderson. She lives in Myrtle Beach, South Carolina, where they are able to enjoy their fabulous life living at the beach! She is a contributor to Domestic Ease, and in addition is a high fashion jewelry consultant with Premier Designs. Most of her time though is devoted to her family, being a mom, being a wife, going to the gym, and shopping with her mom. On top of her busy life, her husband and her helped plant a new church, Wellspring Church. When she does have time to cook, she likes to make desserts, and we are thrilled that she is sharing her Pumpkin Chocolate Chip cookies with us.

What you will need:
1 stick of butter or margarine (Beth uses butter)
1 1/4 cups sugar.
2 eggs, beaten
1 1/2 cups pumpkin
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 small package chocolate chips semi-sweet
1 tsp vanilla

Preheat the oven to 350 degrees.

Mix all of the ingredients together in a mixer and mix lightly.

Drop by spoonfuls onto a greased cookie sheet. Bake at 350 degree for 10 to 12 minutes. Time can vary depending on the oven so be sure to check them midway through.

Let them cool and enjoy!
